Dish of the Day - Fancy Ramen
There's nothing quite like sitting down to peruse recipes on a chilly rainy day with a giant bowl of delicious soup. Recently I've taken to buying packages of Ramen, discarding everything but the noodles, and coming up with my own varations. I think this version was the best, so of course I'm sharing it with you!
Top Ramen noodles
3 bullion cubes, flavor of your choice
4 cups water
1 cup frozen peas and carrots
2 red/new potatoes, sliced
1 stalk celery, sliced
meat or meat substitute (ex. 1/2 chicken breast, cubed, or 1/4 package extra firm tofu, cubed)
salt/pepper to taste
Start the water boiling. Add bullion cubes, veggies, and meat or meat substitute. Boil until potato and celery are soft. Add ramen noodles. Boil until soft, about 5 min. Serve.
